Drawing inspiration from the communities the train travels through, Chef Cudmore crafts menus that foster a true connection between where the passengers are and what they see through the train car’s glass domes. Dishes honor each region's rich culinary heritage, local communities and the people who call these places home. The culinary staff works closely with local suppliers and artisans to not only to have the freshest ingredients on board, but also to support those local communities.

On Canadian routes, Rocky Mountaineer offers dishes that are a culinary road map through Western Canada. Meals can include Alberta beef short rib, as a tribute to the province's cattle ranching heritage, and sweet local corn or fresh berries, both a celebration of British Columbia's fertile farmlands.

And let's not forget the perfectly prepared locally sourced halibut. For dessert, the lemon lavender posset with the Earl Grey macaron that perfectly complements a cup of coffee made from beans roasted in British Colombia, or perhaps a glass of wine from the Okanagan Valley or even a craft beer brewed in Vancouver.
